  • 1 teaspoon sugar
  • 1/2 cup whole milk, room temperature
  • 1/4 cup unsalted butter, melted
  • 4 cups flour
  • 1/4 cup sugar
  • 2 teaspoons kosher salt
  • 1 1/2 cups unsalted butter, cold
  • 24 chocolate batons


Instructions

  1. Activate the yeast by mixing it with warm water and sugar; let it sit until foamy.
  2. Combine the activated yeast mixture with room temperature milk and melted butter.
  3. In another bowl, mix flour, sugar, and salt; gradually add this to the wet mixture until fully incorporated.
  4. Knead the dough for about 8-10 minutes until smooth and elastic. Chill overnight wrapped in plastic.
  5. Prepare a cold butter layer by rolling out chilled butter between parchment paper and refrigerate.
  6. Roll out the dough into a square, place the butter on one half, fold over and seal.
  7. Roll and fold the dough two more times for flakiness; chill again for at least eight hours.
  8. Shape croissants by cutting dough into strips, placing chocolate batons inside, rolling them up, and letting them rise before baking.
  9. Brush with egg wash and bake in a preheated oven until golden brown.
