Ingredients
- 1 Tbs olive oil
- 2 cups sliced carrots
- 2 cups diced sweet potatoes
- 2 cups diced apples
- 2 lbs ground lean turkey
- 3 Tbs tomato paste
- 3 cups crushed tomatoes
- 2 cups strained tomatoes
- 1 can kidney beans (optional)
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp salt (divided)
- 1/2 tsp pepper
- 1 1/2 tsp rubbed sage (divided)
- 1/2 tsp cinnamon
- A sprinkle of nutmeg
- 2 tsp chili powder
Instructions
- Heat olive oil in a large pot over medium heat.
- Add carrots, sweet potatoes, and apples; season with onion powder, garlic powder, salt, pepper, sage, cinnamon, and nutmeg. Cook for about 5 minutes.
- Add ground turkey and cook until no longer pink (5-7 minutes).
- Stir in tomato paste and chili powder; mix well.
- Add crushed tomatoes and strained tomatoes, stir to combine.
- Reduce heat and let simmer for 20-30 minutes. If using kidney beans, add them during the last few minutes.
