  • 1 ½ lbs skirt steak
  • 12 corn tortillas
  • 1 lb purple cabbage
  • 1 large red pepper
  • 1 large poblano pepper
  • 1 red onion
  • olive oil
  • kosher salt
  • 4 green onions, thinly sliced
  • ½ cup freshly squeezed orange juice
  • 2 tsp orange zest
  • 1 (7oz) can chipotle peppers in adobo sauce
  • 2 tbsp honey
  • ¾ cup neutral oil (such as safflower)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roast halved red and poblano peppers along with onion wedges drizzled in olive oil for 35–40 minutes until tender. Roast sliced cabbage on a separate sheet pan for about 25–30 minutes until caramelized.
  3. Let the skirt steak sit at room temperature for 30 minutes before patting dry and seasoning.
  4. Blend together orange juice, zest, chipotle peppers, honey, and neutral oil in a food processor to make the chipotle sauce.
  5. Allow vegetables to cool slightly; then combine with green onions and half the chipotle sauce.
  6. Sear skirt steak in a hot cast iron skillet for about 3–5 minutes per side until cooked to your liking. Let rest before slicing.
  7. Assemble tacos by layering roasted slaw on charred tortillas, adding steak slices, drizzling with remaining chipotle sauce, and topping with crumbled queso fresco.
