  • 15.25 ounces corn (undrained)
  • 14.5 ounces diced tomatoes (undrained)
  • 4 ounces diced green chilies (undrained)
  • 14.5 ounces chicken broth
  • 1 ounce dry ranch seasoning
  • 1 1/2 teaspoons cumin
  • 1 tablespoon chili powder
  • 1/2 cup diced onion
  • 2 boneless, skinless chicken breasts (about 2-3 cups)
  • 8 ounces cream cheese (room temperature)


Instructions

  1. Prepare all the ingredients: Drain and rinse black beans, and dice the onion.
  2. In your slow cooker, add black beans, corn (with liquid), diced tomatoes (with liquid), chicken broth, green chilies (with liquid), ranch seasoning, cumin, chili powder, and diced onion.
  3. Place the boneless chicken breasts on top of the mixture.
  4. Cover the slow cooker with its lid and cook on low for about 4 hours until the chicken is cooked through.
  5. Once cooked, remove the chicken breasts from the pot and stir in room-temperature cream cheese until well combined. Shred or chop the chicken before returning it to the soup.
