  • 1 ⅛ cups sugar
  • 2 cups all-purpose flour
  • 2 ½ tsp baking powder
  • ⅓ cup butter (softened)
  • ⅓ cup Greek yogurt (plain)
  • 1 large orange (washed and cut into pieces, rind included)
  • 2 ½ oz freshly squeezed orange juice


Instructions

  2. In a blender, combine pieces of the orange and blend until smooth; set aside.
  3. In a bowl, mix flour, sugar, and baking powder.
  4. In another bowl, cream softened butter; add Greek yogurt and mix well.
  5. Incorporate eggs one at a time into the butter-yogurt mixture, followed by the blended orange mixture.
  6. Gradually add dry ingredients to wet mixture until just combined.
  7. Pour batter into a greased pan and bake for about 55 minutes or until a toothpick comes out clean.
  8. Allow cooling before serving.
