  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract

  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch cake tin by greasing or lining it with parchment paper.
  2. In a mixing bowl, combine flour, baking powder, ground cardamom, and salt.
  3. In another bowl, cream together softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, orange zest, and orange juice.
  4. Fold in chopped dates into the wet mixture.
  5. Gradually add the dry ingredients to the wet batter until just combined; avoid overmixing.
  6. Pour the batter into the prepared cake tin and bake for 40–45 minutes or until a toothpick inserted comes out clean.
  7. For the honey drizzle, warm honey and orange juice in a saucepan over low heat until combined.
  8. Once baked, drizzle the honey mixture over the warm cake before allowing it to cool slightly for serving.
