- 2 eggs
- ⅔ cup Greek yogurt
- 1 teaspoon vanilla extract
- Grated zest from 1 lemon
- 2 tablespoons fresh lemon juice
- ¾ cup powdered sugar
- 1-2 tablespoons milk or cream
Instructions
- Whisk together egg yolks, granulated sugar, lemon zest, and lemon juice in the top pot of a double boiler over simmering water.
- Stir constantly using a silicone spatula to prevent curdling. Cook until thickened (about 10 minutes). If it doesn't thicken, increase heat while whisking continuously.
