  • 6 cups chicken broth
  • 1 cup uncooked orzo
  • 2 medium carrots
  • 2 sticks celery
  • 1/2 medium onion
  • 3 cloves garlic
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • 1/4 teaspoon Italian seasoning
  • Salt & pepper to taste


Instructions

  1. In a large soup pot, sauté chopped celery, carrots, and onion in butter and olive oil over medium-high heat for 5-7 minutes until tender.
  2. Stir in minced garlic and cook for an additional 30 seconds. Add flour and cook for another minute.
  3. Gradually pour in chicken broth while stirring until flour dissolves. Add Italian seasoning and uncooked chicken breasts; bring to a boil.
  4. Cover with the lid slightly ajar and simmer for 15 minutes.
  5. Stir in uncooked orzo; cook for an additional 10 minutes or until tender, stirring occasionally.
  6. Remove chicken, shred into bite-sized pieces, return to the pot along with lemon juice, parsley, salt, and pepper to taste.
