  • 1 cup unsalted butter (softened)
  • ½ cup powdered sugar (plus extra for garnish)
  • ½ teaspoon salt
  • 1 tablespoon lemon zest
  • ⅔ cup fresh lemon juice (about 4-5 lemons)
  • 4 large eggs
  • 2 cups granulated sugar


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, cream together softened butter and powdered sugar until smooth. Gradually mix in flour and salt until crumbly. Press evenly into the bottom of the prepared pan and bake for 15-20 minutes until lightly golden.
  3. In another bowl, whisk together eggs and granulated sugar until combined. Stir in lemon juice and zest. Pour over the baked crust.
  4. Bake again for 25-30 minutes until set but slightly jiggly in the center; it will firm up as it cools.
  5. Allow to cool completely before slicing into squares. Dust with powdered sugar before serving.
