  • ¼ cup corn
  • ¼ cup carrots (small diced)
  • ¼ cup apple (small diced)
  • ⅓ cup mayonnaise
  • 1½ teaspoon rice apple vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste


Instructions

  1. Prepare cucumber by sprinkling with salt and letting it sit for 10 minutes; drain excess moisture.
  2. Boil potatoes in salted water until fork-tender; add diced carrots in the last three minutes. Drain and let cool.
  3. In a mixing bowl, combine cooked potatoes, carrots, cucumbers, corn, diced apples, and hard-boiled eggs.
  4. In a separate bowl, mix mayonnaise, rice apple vinegar, sugar, salt, and black pepper until smooth; pour over salad mixture.
