Instructions
- Chop onion, carrots, celery, and garlic into manageable pieces.
- In a large pot, bring vegetable broth to a simmer with the chopped vegetables, bay leaf, and parmesan rind if using. Season with salt and black pepper.
- Simmer for 20 minutes until veggies are tender. Remove bay leaf and parmesan rind.
