  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • 1 tsp onion powder

  • 1 – 12 oz can evaporated milk
  • 2 cups cooked chicken (shredded or chopped)
  • 3-4 oz baby spinach
  • 1 pound shelf-stable gnocchi

Instructions

  1. In a large pot or Dutch oven, heat reserved sun-dried tomato oil over medium heat. Add the diced onion, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in sun-dried tomatoes, garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper; sauté for an additional minute.

  4. Pour in the chicken broth while scraping browned bits from the pot; stir until well mixed.
  5. Bring to a simmer and partially cover the pot; reduce heat to low and simmer for about 15 minutes.
