- 5 cups fresh strawberries, hulled and quartered
- 3 tbsp granulated sugar
- 1-2 tbsp strawberry jam, optional
- 2 and 3/4 cups all-purpose flour
- 1/4 cup + 2 tbsp granulated sugar
- 4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 3/4 cup salted butter, cubed & cold
- 1 cup cold buttermilk + 1-2 tsp extra
- 1-2 tbsp heavy cream, for brushing tops of biscuits
- coarse sugar, for sprinkling
- 1 and 1/4 cups cold heavy cream
- 3 tbsp powdered sugar
- 1 tbsp vanilla extract
Instructions
- Prep the Strawberries: Mix quartered strawberries with sugar (and optional jam) in a bowl. Refrigerate.
- Make the Biscuits: Combine dry ingredients, cut in butter, add buttermilk, shape dough, fold for layers, cut out biscuits. Chill.
- Bake: Place biscuits on a greased baking sheet, brush tops with heavy cream, sprinkle coarse sugar. Bake at 400°F for 20–24 minutes until golden.
- Make Whipped Cream: Beat cold heavy cream with powdered sugar and vanilla until stiff peaks form.
- Assemble: Slice biscuits in half, layer with strawberries and whipped cream, then serve immediately.
