- 1 small yellow onion
- 3 cups broccoli florets
- 1 zucchini
- 1 small yellow bell pepper
- 1 small red bell pepper
- ¼ cup low sodium chicken broth (or alternatives)
Instructions
- Cut chicken into bite-sized pieces; season with salt and pepper.
- In a bowl, mix garlic powder, onion powder, thyme, rosemary, paprika, and chili powder; sprinkle half over chicken.
- Drizzle olive oil over chicken and toss to coat evenly.
- Heat skillet over medium-high heat; add chicken and cook until browned (6-8 minutes). Transfer to a plate.
- In the same skillet, add remaining olive oil; sauté sliced onion for 2 minutes.
- Add broccoli florets, zucchini, bell peppers; season with remaining spices and cook until crisp-tender (4-6 minutes).
- Pour in chicken broth; return chicken to skillet; stir everything together for another minute.
- Garnish with parsley before serving.
