  • 6 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 cup orzo pasta (or rice)
  • Juice and zest of 2 large lemons
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, place chicken breasts and cover with chicken broth. Bring to a gentle boil.
  2. Reduce heat and simmer until chicken is cooked through (about 15-20 minutes). Remove chicken and shred after cooling.
  3. In another pot, heat olive oil over medium heat. Sauté onion, carrots, and celery until softened (5-7 minutes).
  4. Add minced garlic and sauté for one more minute.
  5. Return shredded chicken to the vegetable pot.
  6. Pour in orzo (or rice) along with additional chicken broth. Stir in lemon juice, zest, oregano, thyme, salt, and pepper.
  7. Simmer for about 10-12 minutes until pasta is cooked through. Serve hot garnished with fresh parsley.
