- 1 lb beef tenderloin
- 2 tbsp grated fresh ginger
- 1/4 cup freshly squeezed lime juice
- 2 tbsp honey
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup short-grain rice or jasmine rice
- 3 garlic cloves, minced
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine ginger, lime juice, honey, salt, and pepper. Add the beef tenderloin and coat well. Let it marinate for at least 30 minutes.
