  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g raw sugar
  • 1 teaspoon vanilla extract
  • 85 g dark or milk chocolate chips


Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
  2. In a heatproof bowl over simmering water, melt together the chopped dark chocolate and butter until smooth. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the caster sugar, raw sugar, and eggs on high speed until thick and fluffy.
  4. Sift together the flour, cocoa powder, baking powder, and salt in another bowl, then fold in the chocolate chips.
  5. Gently incorporate the melted chocolate mixture into the egg mixture before folding in the dry ingredients until just combined.
  6. Drop spoonfuls of batter onto the prepared tray and bake for 12-14 minutes until set on top but still soft in the center.
  7. Let cool slightly before enjoying.
