  • 2 large eggs (for filling)
  • 4 large egg yolks


Instructions

  1. In a food processor, combine flour, powdered sugar, and salt. Blend until mixed.
  2. Add cubed cold butter and pulse until pea-sized pieces form. Mix in the egg and vanilla until a dough forms.
  3. Wrap the dough in plastic wrap and chill in the refrigerator for at least one hour.
  4. Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Trim excess edges and poke holes in the bottom; freeze for 20 minutes.
  5. Preheat oven to 350°F (180°C) and bake crust for 15-20 minutes until lightly golden brown. Cool before adding lemon curd filling.
