Description

This naturally gluten-free cake is rich, moist, and bursting with citrus flavor. Whole oranges are blended into the batter, creating a fragrant and tender crumb, while almonds and pistachios add a nutty depth and delicate texture. It’s an elegant dessert that feels both light and indulgent.

For the Cake:
2 medium oranges (about 350 g total)
200 g granulated sugar
200 g almond meal (finely ground almonds)
100 g shelled pistachios, finely ground
6 large eggs
1 teaspoon baking powder
A pinch of salt

Optional Garnishes:
Powdered sugar, for dusting
Crushed pistachios


Instructions

  • Preheat your oven to 180°C (350°F) and line a round cake pan with parchment paper.
  • Place the whole oranges in a pot, cover with water, and boil for about 45–60 minutes until very soft. Drain and let cool slightly.
  • Cut the softened oranges, remove any seeds, then blend (including the peel) into a smooth puree.
  • In a large bowl, whisk the eggs and sugar together until light and slightly thickened.
  • Stir in the orange puree until well combined.
  • Add the almond meal, ground pistachios, baking powder, and salt. Mix until you have a smooth batter.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 45–55 minutes, or until the cake is set and a toothpick inserted in the center comes out clean.
  • Allow the cake to cool completely in the pan before removing.
  • Dust with powdered sugar and sprinkle with crushed pistachios before serving, if desired.
