Ingredients
For the Cake:
2 medium oranges (about 350 g total)
200 g granulated sugar
200 g almond meal (finely ground almonds)
100 g shelled pistachios, finely ground
6 large eggs
1 teaspoon baking powder
A pinch of salt
Optional Garnishes:
Powdered sugar, for dusting

Instructions
- Preheat your oven to 180°C (350°F) and line a round cake pan with parchment paper.
- Place the whole oranges in a pot, cover with water, and boil for about 45–60 minutes until very soft. Drain and let cool slightly.
- Cut the softened oranges, remove any seeds, then blend (including the peel) into a smooth puree.
- In a large bowl, whisk the eggs and sugar together until light and slightly thickened.
- Stir in the orange puree until well combined.
- Add the almond meal, ground pistachios, baking powder, and salt. Mix until you have a smooth batter.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 45–55 minutes, or until the cake is set and a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan before removing.
- Dust with powdered sugar and sprinkle with crushed pistachios before serving, if desired.
