  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 Tablespoons chives


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, melt butter with olive oil. Brown seasoned sirloin cubes for about 6-8 minutes.
  3. Add chopped onions and carrots; sauté until softened (4-5 minutes).
  4. Stir in flour, then add apple cider and beef broth, bringing the mixture to a boil.
  5. Transfer the mixture to an oven-safe pan, cover, and bake for 1 to 1½ hours.
  6. Meanwhile, boil peeled potatoes in salted water until tender. Drain and mash with milk, sour cream, cheese, and chives until creamy.
