  • 1 small butternut squash (peeled and chopped)
  • 2 sweet potatoes (peeled and chopped)
  • 1 yellow onion (sliced)
  • 3 cloves garlic (peeled)
  • 2 tablespoons olive oil
  • 400 ml full-fat coconut milk
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon chili powder
  • 1 teaspoon chili flakes
  • 750 ml vegetable or chicken stock
  • Salt and pepper to taste


Instructions

  1. Prepare your ingredients by peeling and chopping the butternut squash and sweet potatoes. Slice the onion and peel the garlic cloves.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until soft (about 5 minutes), then add garlic for an additional minute.
  3. Add the chopped butternut squash and sweet potatoes to the pot. Stir well.
  4. Sprinkle in ground cumin, cinnamon, chili powder, chili flakes, salt, and pepper; mix thoroughly.
  5. Pour in vegetable or chicken stock until ingredients are submerged. Bring to a boil; reduce heat and simmer for about 20 minutes until tender.
  6. Blend until smooth using an immersion blender or traditional blender.
  7. Stir in coconut milk until fully incorporated; adjust seasoning if necessary.
  8. Serve warm and enjoy!
