  • 1 cup Pecans (can substitute with walnuts)
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Red apple vinegar (can substitute with apple cider vinegar)
  • 1 tablespoon Lemon Juice (fresh is best)
  • 3 tablespoons Tahini (can substitute with Greek yogurt)
  • 1 teaspoon Dijon Mustard (can substitute with whole grain mustard)
  • 1/2 teaspoon Garlic Powder (or fresh minced garlic)
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Sea Salt (to taste)


Instructions

  1. Preheat oven to 350°F (175°C). Spread pecans on a baking sheet; drizzle with maple syrup and bake for 10 minutes until golden.
  2. Chop celery into bite-sized pieces, core and dice the apple, and finely dice the red onion.
  3. In a mixing bowl, combine celery, apple, cranberries, and onion. Add cooled pecans.
  4. Whisk together maple syrup, vinegar, lemon juice, tahini, mustard, garlic powder, onion powder, and sea salt in a separate bowl.
  5. Pour dressing over salad ingredients; toss gently until well coated.
