2 large chicken breasts
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, undrained
1 can (10 oz) Rotel tomatoes with green chilies, undrained
1 packet ranch seasoning mix
1 teaspoon ground cumin
1 tablespoon chili powder
1 teaspoon onion powder
½ cup water

8 ounces cream cheese (block, cubed)

Shredded cheese

Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the black beans, corn (with liquid), and Rotel tomatoes on top of the chicken.
- Sprinkle in the ranch seasoning mix, cumin, chili powder, and onion powder.
- Pour in the water and gently stir to combine the ingredients slightly.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
- Remove the chicken breasts, shred them using two forks, then return the shredded chicken to the crockpot.
- Add the cubed cream cheese and stir until fully melted and incorporated, creating a creamy texture.
- Let the chili cook for an additional 10–15 minutes until smooth and heated through.
- Taste and adjust seasoning if needed.
- Serve hot with your favorite toppings like shredded cheese, sour cream, avocado, tomatoes, and crunchy chips.
