Ingredients
Protein and Beans
3 boneless chicken breasts
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can great northern beans, not drained
Vegetables and Sauces
1 (10 oz) can diced tomatoes with green chiles
1 cup salsa verde
½ onion, chopped
Seasonings
1 packet ranch seasoning
2 teaspoons ground cumin
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon black pepper
Broth and Cream
1 cup chicken broth
8 oz cream cheese
Garnish
½ cup fresh cilantro, chopped
Instructions
- Place the chicken breasts in the bottom of the crock pot.
- Add the black beans, great northern beans (with liquid), diced tomatoes with green chiles, salsa verde, and chopped onion.
- Sprinkle in the ranch seasoning, cumin, minced garlic, salt, and black pepper.
- Pour in the chicken broth and gently stir to combine.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender.
- Remove the chicken, shred it using two forks, then return it to the crock pot.
- Add the cream cheese and stir until melted and fully incorporated into the chili.
- Let cook for an additional 10–15 minutes, stirring occasionally, until creamy and well combined.
- Garnish with chopped cilantro before serving.
