Ingredients
- 16 corn tortillas (6-inch)
- 1 pound ground beef
- 2 cups refried beans
- 2 cups enchilada sauce
- 8 ounces cheddar cheese, shredded
- Vegetable oil for frying
Instructions
- Heat vegetable oil in a skillet over medium heat. Fry tortillas one or two at a time until golden brown (about 2-3 minutes each side). Drain on paper towels and season lightly with salt.
- Preheat your oven to 350°F (175°C).
- In another skillet, cook ground beef over medium heat until browned (6-7 minutes). Stir in taco seasoning and simmer with 1/4 cup water for about 10 minutes.
- On a baking sheet, layer crispy tortillas with enchilada sauce, refried beans, and seasoned beef. Top with another tortilla, more enchilada sauce, and shredded cheese.
