  • 4 boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper (to taste)
  • 2 tbsp olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ tsp salt
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1½ cups whole milk
  • ½ cup chicken broth
  • ½ tsp garlic powder
  • ¼ tsp dried thyme
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley (chopped)


Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet, heat olive oil over medium heat. Cook the chicken for about 6-7 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add rice, chicken broth, and salt. Bring to a boil then reduce heat to simmer for 18-20 minutes until rice is tender.
  4. For the creamy sauce, melt butter in the skillet. Whisk in flour to create a roux. Gradually add milk and remaining chicken broth while whisking until smooth. Stir in garlic powder and thyme followed by cheeses until melted.
  5. Return chicken to the skillet with the sauce; simmer for another 5 minutes.
  6. Serve hot over rice garnished with fresh parsley.
