  • 1 cup cherry tomatoes
  • 1/2 red bell pepper
  • 1/2 yellow onion
  • 1 tbsp olive oil
  • 1/2 tsp crushed red pepper
  • 1 1/2 cups medium shells (dried pasta)
  • 8 oz fresh chicken sausage
  • 4 cups fresh baby spinach
  • 1/2 cup half & half
  • 1/3 cup finely grated Parmesan cheese


Instructions

  1. Prepare ingredients by quartering cherry tomatoes and chopping bell pepper and onion.
  2. In a large skillet over medium heat, sauté olive oil, tomatoes, bell pepper, onion, salt, and crushed red pepper for 7-8 minutes until tender.
  3. Boil salted water in another pot and cook the pasta according to package instructions until al dente.
  4. Add chicken sausage and minced garlic to the skillet; cook for about 5-6 minutes while breaking up the sausage.
  5. Stir in granulated sugar and half & half until mostly absorbed.
  6. Fold in fresh spinach until wilted.
  7. Combine cooked pasta with the sausage sauce using a slotted spoon, reserving some pasta water.
  8. Incorporate Parmesan cheese and adjust creaminess with reserved pasta water before serving.
