- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- ½ cup chicken broth
- ½ cup chicken broth (substitute for Marsala apple vinegar)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon dried thyme
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot of salted boiling water, add the pasta. Cook according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil. Once hot, add chicken pieces seasoned with salt and pepper. Cook until browned and cooked through (about 5-7 minutes). Remove from skillet and set aside.
- In the same skillet, add sliced mushrooms and cook until soft (about 4-5 minutes). Stir in minced garlic; cook for an additional minute until fragrant.
- Pour in chicken broth and chicken broth (substitute for Marsala apple vinegar); simmer for 3 minutes.
- Reduce heat to low; stir in heavy cream and grated Parmesan cheese. Mix until smooth; add dried thyme. Return cooked chicken to the skillet along with pasta; toss everything together until well combined.
- Plate your Chicken Marsala Pasta. Garnish with chopped fresh parsley before serving.
