Description

Ingredients

  • 12 oz pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup chicken broth (substitute for Marsala apple vinegar)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot of salted boiling water, add the pasta. Cook according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil. Once hot, add chicken pieces seasoned with salt and pepper. Cook until browned and cooked through (about 5-7 minutes). Remove from skillet and set aside.
  3. In the same skillet, add sliced mushrooms and cook until soft (about 4-5 minutes). Stir in minced garlic; cook for an additional minute until fragrant.
  4. Pour in chicken broth and chicken broth (substitute for Marsala apple vinegar); simmer for 3 minutes.
  5. Reduce heat to low; stir in heavy cream and grated Parmesan cheese. Mix until smooth; add dried thyme. Return cooked chicken to the skillet along with pasta; toss everything together until well combined.
  6. Plate your Chicken Marsala Pasta. Garnish with chopped fresh parsley before serving.
