- 115g (½ cup) unsalted butter, softened
- 100g (½ cup) brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 200g (1 cup) finely grated carrots
- 150g (1 cup) chopped pitted dates
- 60ml (¼ cup) coconut milk or whole milk
- 60g (¼ cup) chopped walnuts (optional)
Instructions
- Preheat your oven to 175°C (350°F). Grease and line a 9-inch round or 8-inch square cake pan with parchment paper to prevent sticking.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, ground cinnamon, ground ginger, and ground nutmeg. Set aside once combined.
- In a large bowl, cream together softened butter and brown sugar until light and fluffy.
- Add eggs one at a time into the mixture, beating well after each addition. Then mix in vanilla extract until fully incorporated.
- Gradually add the dry ingredient mixture to the wet mixture, alternating with coconut milk, and mix just until combined; do not overmix.
- Gently fold in finely grated carrots, chopped pitted dates, and optional chopped walnuts.
- Pour the batter into the prepared pan using a spatula to smooth the top evenly.
- Bake in the preheated oven for about 35–40 minutes until golden brown or until a toothpick inserted into the center comes out clean.
- Allow cooling in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- If you want to add glaze, in a bowl, whisk together powdered sugar, milk or cream, and vanilla extract until smooth, then drizzle over cooled cake before serving.
