  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • 10 oz. Rotel diced tomatoes with green chilies
  • 3 cloves garlic, minced
  • ¾ cup cheddar jack cheese, shredded
  • 1-2 tablespoons olive oil (or avocado oil)
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 1 teaspoon brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 teaspoons lime juice
  • Lime wedges
  • Fresh cilantro, roughly chopped


Instructions

  1. Season chicken breasts with Cajun seasoning and dredge lightly in flour.
  2. In a skillet, heat olive oil and butter; sear chicken for about 6–7 minutes on each side until golden brown.
  3. Remove chicken, then sauté garlic in the same skillet before adding chicken broth, cream, honey, hot sauce, spices, and simmer.
  4. Return chicken to skillet along with diced tomatoes; sprinkle cheese on top and cover until melted.
  5. Drizzle lime juice over the dish before serving, garnished with fresh cilantro.
