  • 1 cup chopped leek (white and light green parts)

  • 4 cups chicken or vegetable broth
  • 1-2 cups water
  • 1 tbsp mustard powder
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup dried orzo
  • 8 oz sharp cheddar cheese (grated)
  • 1 cup heavy whipping cream
  • 5-7 slices turkey slices


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large pot over medium heat, melt olive oil and butter. Sauté leeks, broccoli stems, and potatoes for about 3 minutes. Add garlic, mustard powder, salt, and pepper; stir for another minute.
  3. Pour in the broth and water (adjust for thickness) and bring to a boil. Reduce heat and simmer partially covered for 10 minutes until vegetables soften.
  4. On a lined baking sheet, crisp turkey slices in the oven for about 10-12 minutes until golden brown.
  5. Blend the soup until smooth, then return to the pot and bring back to a gentle simmer.
  6. Stir in orzo; cook for about 5 minutes before adding broccoli florets and cream. Cook until orzo is tender.
  7. Stir in cheese until melted; serve topped with crispy turkey slices.
