Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onion and green bell pepper until soft (5-7 minutes). Add minced garlic and cook for an additional minute.
- Stir in oregano and cumin, then add the rice. Mix well for about 2 minutes to combine flavors.
- Pour in chicken broth and bring to a gentle boil. Add drained pigeon peas, stirring to evenly distribute.
