- 810 medium shrimp, peeled & deveined
- 1 cup cooked brown rice
- 1 cup corn (fresh, frozen, or canned)
- 1 cup diced pineapple
- 1 cup diced tomato
- Juice of 1 lime
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt & black pepper to taste
- Extra cilantro for garnish
Instructions

- Heat a skillet over medium heat and sear shrimp for 2-3 minutes on each side until pink and slightly charred.
