  • 2.2 lbs white rock sugar
  • ½ cup lemon juice (for sterilizing)


Instructions

  1. Thoroughly wash yuzu fruit under running water; slice in half and remove seeds.
  2. In a large mixing bowl, layer sliced yuzu and rock sugar. Stir gently until sugar starts to dissolve.
  3. Pack the mixture into two prepared mason jars, pressing down lightly. Pour lemon juice over the contents until fully submerged.
  4. Seal jars tightly and store in a cool, dark area for 7 days, shaking gently every few days to aid dissolving.
