Description

This wild rice chicken stir-fry is a colorful, nutrient-packed meal loaded with tender chicken, crisp vegetables, and a savory-sweet Asian-inspired sauce. The nutty wild rice blend adds texture and depth, making this a wholesome and satisfying dinner that comes together quickly.


Ingredients

For the Chicken
300 g chicken breast, cut into bite-sized pieces
1 tablespoon soy sauce
1 teaspoon cornstarch
1 teaspoon sesame oil
Salt and black pepper, to taste

Vegetables and Rice
1 cup cooked wild rice blend
1 cup broccoli florets
1 cup sliced red bell pepper
1 cup sliced yellow bell pepper
1 cup sugar snap peas
1 cup trimmed green beans
2 tablespoons vegetable oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated

For the Sauce
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon honey or maple syrup
1 teaspoon rice vinegar
2 tablespoons water


Instructions

  • In a bowl, combine the chicken pieces with soy sauce, cornstarch, sesame oil, salt, and pepper. Mix well and let marinate for 10 to 15 minutes.
  • In a small bowl, whisk together the soy sauce, oyster sauce, honey or maple syrup, rice vinegar, and water. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook for 4 to 6 minutes, stirring frequently, until fully cooked and lightly golden. Remove from the pan and set aside.
  • Add the remaining tablespoon of vegetable oil to the skillet. Stir in the garlic and ginger, cooking for about 30 seconds until fragrant.
  • Add the broccoli, bell peppers, sugar snap peas, and green beans. Stir-fry for 4 to 5 minutes until the vegetables are tender-crisp.
  • Return the cooked chicken to the skillet. Add the cooked wild rice and toss everything together.
  • Pour the prepared sauce over the mixture and stir well. Cook for 2 to 3 minutes until heated through and the sauce slightly thickens and coats the ingredients.
  • Taste and adjust seasoning if needed. Serve immediately while hot.
