  • 1 small onion, chopped
  • 1 package taco seasoning
  • ½ cup water
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can diced tomatoes with green chiles (10 oz)
  • ½ cup sour cream
  • 1 bag Fritos corn chips (9.25 oz)
  • 2 cups Mexican-style shredded cheese


Instructions

  1. Preheat the oven to 350°F and spray a 13×9 baking dish with nonstick cooking spray.
  2. In a large skillet, brown the ground beef over medium heat until nearly cooked through. Add onions and cook until soft.
  3. Stir in taco seasoning and water; bring to a boil then reduce heat.
  4. Mix in black beans, diced tomatoes, and sour cream; cook for 8–10 minutes until heated through.
  5. Layer Fritos at the bottom of the baking dish followed by cheese, the beef mixture, and another layer of cheese.
  6. Cover with foil and bake for 15 minutes; remove foil and bake an additional 5 minutes until cheese is bubbly.
  7. Top with more Fritos and desired toppings before serving.
