- 300g dairy-free butter (for frosting)
- 500g icing sugar
- 6 tablespoons mango puree (for frosting)
- 400g desiccated coconut (for decoration)

Instructions
- Preheat your oven to 180°C (350°F) and grease two 8-inch round baking pans.
- Mix dairy-free milk with apple cider vinegar in a bowl; let sit for about 5 minutes.
- In a large bowl, whisk together self-raising flour, caster sugar, baking powder, and bicarbonate of soda.
- Combine sunflower oil, vanilla extract, and mango puree into the dairy-free milk mixture; mix until smooth.
- Gently fold the wet mixture into the dry ingredients until just combined.
- Divide batter between prepared pans and bake for approximately 25–30 minutes or until a toothpick comes out clean.
