Ingredients

Scale
  • 1 cup warm milk (105-115°F)
  • 1/4 ounce active dry yeast (about 2 1/4 teaspoons)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 3 1/2 to 4 cups all-purpose flour
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a mixing bowl, combine warm milk, yeast, and a pinch of sugar; allow it to foam for 5-10 minutes.
  2. Whisk in the remaining sugar, egg, vanilla extract, salt, and melted butter until well combined.
  3. Gradually add flour until a soft dough forms; knead on a floured surface for about 5-7 minutes.
  4. Place the dough in a greased bowl and let it rise covered in a warm area for about 1 to 1.5 hours until doubled in size.
  5. Roll out the dough to about 1/4 inch thickness; cut into squares or rectangles.
  6. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  7. Fry beignets in batches for about 1-2 minutes per side until golden brown.
  8. Use a slotted spoon to drain excess oil and dust generously with powdered sugar before serving warm.
