  • 16 ounces mild Italian Turkey sausage (chicken or turkey)
  • 5 cups chicken broth
  • 1 medium onion (chopped)
  • 1 & 1/2 cups celery (chopped)
  • 1 & 1/2 cups carrots (chopped)
  • 2 tablespoons garlic (minced)
  • 1 cup zucchini (chopped)
  • 1 cup yellow squash (chopped)
  • 2 cups baby spinach
  • 1 can diced tomatoes (15 ounces)
  • 1 can cannellini beans (15 ounces), drained and rinsed
  • 1 can red kidney beans (15 ounces), drained and rinsed
  • 1/2 cup dry ditalini pasta


Instructions

  1. In a large soup pot, brown the Italian Turkey sausage over medium heat. Drain excess fat.
  2. Add chopped onion, celery, carrots, garlic, and tomato paste. Sauté for about 5 minutes until softened.
  3. Stir in diced tomatoes and chicken broth; bring to a boil.
  4. Reduce heat and simmer for 30–45 minutes until carrots are tender.
  5. Stir in cannellini beans, red kidney beans, zucchini, yellow squash, and ditalini pasta; boil again.
  6. Simmer for another 10 minutes until pasta is cooked through.
  7. Remove from heat; stir in baby spinach until wilted.
  8. Serve hot with basil pesto and grated parmesan cheese if desired.
