  • 8-10 slices Turkey Bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 1-2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)


Instructions

  1. In a skillet over medium heat, cook the turkey bacon until it is crispy. Remove from heat, chop into bite-sized pieces, and set aside.
  2. In a large pot, heat butter or oil over medium heat. Add diced onions and sliced carrots; sauté until they are tender.
  3. Pour in chicken broth and bring to a simmer over medium heat. Season with salt, black pepper, garlic powder (or minced garlic), dried thyme, and optional red chili flakes. Stir well.
  4. Slowly stir in heavy cream while continuously mixing. Gradually add shredded cheddar cheese until melted into the soup base.
  5. Add gnocchi to the pot; cook for about 2 minutes or until they are soft.
  6. Stir in chopped turkey bacon. Taste and adjust seasoning if necessary before serving hot.
