  • 175g plain flour
  • 4 large eggs
  • 300ml milk
  • 6 rashers turkey bacon
  • 12 chipolata sausages
  • 2 onions
  • 200g Brussels sprouts
  • Chicken stock


Instructions

  1. Preheat oven to 220C/200C Fan/Gas 7.
  2. In a large bowl, sift flour and create a well in the center. Beat eggs and milk together, then pour into the well and mix until smooth. Season with salt, pepper, and add Dijon mustard.
  3. Wrap each chipolata sausage in half a rasher of turkey bacon.
  4. Heat oil in a roasting tin, add wrapped sausages and onion wedges. Roast for 20 minutes.
  5. For the gravy, sauté sliced onions with thyme in butter and olive oil until tender. Stir in flour, then gradually add chicken stock; simmer until thickened.
  6. After roasting for 20 minutes, add Brussels sprouts to the tin and return to oven for an additional 5 minutes.
  7. Pour batter over sausages and veggies; bake for another 20–25 minutes until golden brown.
