- 2 small chicken breasts
- 1 Italian style loaf
- 2 tablespoons poultry seasoning (or salt, pepper, garlic powder)
- 1 1/2 sticks unsalted butter
- 2 tablespoons minced garlic
- 2 tablespoons chopped parsley
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons olive oil
- 1/4 cup shredded parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup heavy cream
Instructions
- Cut the chicken breasts into ½ inch pieces and season with olive oil and poultry seasoning. Cook in a skillet over medium heat until golden brown.
- Slice the Italian loaf in half lengthwise. Mix melted butter with minced garlic, parsley, and red pepper flakes; spread on the bread halves and toast at 350°F for 5–10 minutes.
- In the same skillet, melt butter and sauté minced garlic before adding heavy cream and parmesan cheese. Simmer until slightly thickened.
- Spread half of the sauce on toasted bread, add cooked chicken and mozzarella cheese, then top with the remaining sauce.
- Bake at 350°F for another 5 minutes until cheese is melted. Slice and serve warm.
