Ingredients
- 1 lb ground chicken
- 1/4 cup panko breadcrumbs
- 1 egg

- 1 tbsp Thai red curry paste
- 1 cup coconut milk (or broth)
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine ground chicken, breadcrumbs, egg, minced garlic, grated ginger, chopped cilantro, red curry paste, salt, and pepper. Mix until just combined and form into 1-inch meatballs.
- Heat neutral oil in a frying pan over medium heat. Add meatballs in batches and cook until browned on all sides and cooked through (about 8-10 minutes). Remove from the pan.
- In the same pan, sauté diced onion until translucent. Add minced garlic and red curry paste; cook for another minute.
- Return meatballs to the pan and add coconut milk or broth. Simmer for 5-7 minutes to meld flavors.
