  • 1/3 cup molasses
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 cup white sugar (for coating)
  • 1 tsp ground cinnamon (for coating)
  • 1/2 tsp ground ginger (for coating)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, white sugar, and brown sugar until light and fluffy.
  3. Mix in the egg, molasses, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, ground ginger, salt, and additional spices. Gradually add this dry mix to the wet ingredients until fully incorporated.
  5. Scoop tablespoon-sized dough balls and roll them in a mixture of white sugar, ground cinnamon, and ginger.
  6. Place on a lined baking sheet about two inches apart and bake for 9 minutes or until set but still soft in the center.
  7. Let cool for a few minutes on the sheet before transferring to wire racks.
