  • 4 small sweet potatoes
  • 1 tablespoon avocado oil
  • 1 bag shredded lettuce (8 oz)
  • 1 red onion (thinly sliced)
  • 1 pint diced tomatoes (10 oz)
  • 1/2 cup pickles (diced)
  • special sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp pepper


Instructions

  1. Preheat the oven to 400°F.
  2. Peel and dice the sweet potatoes; place in a large bowl.
  3. Toss sweet potatoes with avocado oil, garlic powder, onion powder, salt, and pepper.
  4. Spread on a baking sheet and roast for 30–40 minutes, stirring halfway through.
  5. In a skillet over medium heat, brown the ground beef for about eight minutes.
  6. Season the beef with Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
  7. Layer bowls starting with shredded lettuce, followed by roasted sweet potatoes and cooked beef.
