Ingredients
- 1 egg
- 1 avocado, sliced
- 1 avocado, halved
- 1 cup cherry tomatoes, halved
- 1 cup cooked or canned corn, drained
- 1 cup fresh parsley or arugula
- 1 tsp sesame seeds
- 1 tsp olive oil
- Salt & pepper to taste
Instructions
- In a nonstick pan over medium heat, add a little olive oil. Crack in the egg and cook sunny-side-up until the whites are firm and the yolk remains runny.
- In a bowl, arrange halved avocado, avocado slices, cherry tomatoes, corn, and fresh parsley or arugula.
- Gently place the fried egg in the center of the bowl. Drizzle the halved avocado with olive oil and sprinkle sesame seeds over the sliced one.
- Season with salt and pepper to taste before serving immediately.
