Ingredients

Scale
  • 2 large eggs
  • 1 cup fresh spinach leaves
  • 45 button mushrooms, sliced
  • 2 medium tomatoes, halved
  • 1 ripe avocado, sliced
  • 1 slice sourdough or whole grain bread
  • Olive oil
  • Salt and freshly cracked black pepper

Instructions

  1. Heat ½ tablespoon of olive oil in a non-stick pan over medium-low heat. Crack the eggs into the pan and cook until the whites are set but yolks remain soft. Season with salt and pepper.
  2. In another pan, drizzle olive oil and sauté minced garlic (if using) before adding spinach. Cook for 1-2 minutes until wilted.
  3. In the same pan as the spinach, sauté sliced mushrooms until golden brown, then roast the tomato halves if desired.
  4. Toast your bread until crisp and top generously with sautéed mushrooms.
  5. Assemble by placing sunny eggs on a plate alongside sautéed spinach, roasted tomatoes, avocado slices, and mushroom toast.
