  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream


Instructions

  1. Prepare the strawberry sauce by cooking strawberries, sugar, and lemon juice in a saucepan until soft. Mash into a puree and thicken with cornstarch slurry. Cool completely.
  2. Preheat oven to 325°F (160°C).
  3. For the crust, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan and bake for 8-10 minutes.
  4. Beat cream cheese and sugar until smooth; add eggs one at a time followed by vanilla extract and sour cream.
  5. Pour cheesecake mixture over the crust; swirl in cooled strawberry sauce.
  6. Bake in a water bath for 55-65 minutes until edges are set. Cool gradually in the oven before refrigerating for at least 6 hours.
