  • 1 box white cake mix (15.25 oz)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 2-3 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream (cold)
  • 1 box strawberry-flavored vegan gelatin (3 oz)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three round cake pans.
  2. In a large bowl, mix the cake mix and strawberry vegan gelatin powder. Add eggs, milk, oil, sour cream, mashed strawberries, and vanilla extract. Beat until smooth.
  3. Divide batter into prepared pans and bake for 22-28 minutes until a toothpick comes out clean.
  4. Cool cakes for 10 minutes in pans before transferring to wire racks to cool completely.
  5. For frosting, beat cream cheese and butter until smooth; add powdered sugar and vanilla extract, then whip in cold heavy cream until fluffy.
