- 2 medium potatoes
- 3 large eggs
- 1 cup shredded cheddar cheese

- Fresh avocado

- Salt & pepper to taste
- 1 tbsp olive oil (for potatoes)
- 1 tsp dried herbs (rosemary, thyme, or Italian mix)
- 2 tbsp milk or cream
Instructions
- Preheat the oven to 200C (400F). Toss potato wedges with olive oil, dried herbs, salt, and pepper. Spread on a roasting pan and roast for 25-30 minutes until golden brown.
- Season the steak with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the steak for about 3-5 minutes per side. Let it rest before slicing.
- Whisk together eggs, milk, salt, and pepper in a bowl. Pour into a skillet over medium-low heat, gently stirring until cooked. Add cheddar cheese and mix until melted.
- Serve by plating sliced steak with cheesy scrambled eggs and roasted potatoes. Top with sliced avocado and cream cheese.
